Avocado Pesto, with Marinated Mushrooms and Tomatoes on Rye Toast.

4 mushrooms (sliced)
1/2 small red onion (sliced)
1 tablespoon agave
1 tablespoon tamari
2tablespoons of balsamic vinegar

Place all ingredients in a bowl and let marinate for about 30mins.

PESTO
1/2 avocado
1/4 cup fresh basil
1 tablespoon pine nuts
1 clove garlic
Juice from 1/2 lemon/lime
Salt & pepper

Place all ingredients in a food processor until smooth, assemble and enjoy ✌️
